This beef and veggie meal prep is one of my staple meals that keeps my weeks simple and consistent. I make this every Sunday, store it in the fridge, and have it for lunch every day at school. It’s filling, nourishing, and extremely easy to prepare, making it perfect for busy schedules.

- I use frozen bag from Costco that Includes carrots, corn, peas, and green beans but any veggies work.

- I get this from the Trader Joes freezer section it contains tomatoes, peppers, and jalapeños for a subtle spice and taste boost.


Preparation Steps

  • Step 1: Cook ground beef in a large pan over medium heat.

  • Step 2: Add frozen mixed vegetables directly to beef and mix.

  • Step 3: Cook vegetables for 5–7 minutes until warm.

  • Step 4: Stir in riced cauliflower and combine thoroughly.

  • Step 5: Cook another 5–7 minutes, allowing excess moisture to evaporate.

  • Step 6: Let cool slightly before portioning into meal prep containers.
